Percival Packing is in prime location to maintain beef supply

At a time when the beef supply chain is being tested like never before, small processing plants have emerged as a reliable source for those wanting a good cut of steak or hamburger for the outdoor grill.

Percival Packing in Scott City - one of a handful of small processors across Western Kansas - has been able to keep pace with the huge spike in demand since the coronavirus pandemic first emerged in late March.

Co-owners Tim Percival and his son, Jamie, acknowledge they are wading through uncharted territory.
